以象山一家罐头厂所废弃的橘子皮为原料,研究了橘皮中功能色素的不同提取工艺.在单因素水提试验的基础上,用微波辅助水提法进行正交试验,得到了橘皮色素的最佳浸提条件为:微波处理2 min,料液比为1∶12,70℃下浸提1次,每次3.5 h,在此条件下提取物多酚含量可达0.037 mg/mL;通过DPPH法测定橘皮提取物的抗氧化性能.结果表明,随着提取物质量浓度的增加而增大.
Abstract:The different extraction processes of functional pigments in orange peel were studied.On the basis of the single-factor test,microwave-assisted water extraction was used to provide an orthogonal test.The result showed that when the conditions were microwave-assisted 2 min,solid-liquid ratio of 1∶12,extraction temperature 70 ℃ and time 3.5 h,the yield of polyphenols was up to 0.037 mg/mL.The antioxidation activity of orange peel pigments were determined by DPPH method.The result shows that the radical scaernging rate is increased by the increasing of the concentration of the extraction.
